This handmade fillet knife is designed for precise fish cleaning, trimming, and filleting. The curved blade profile supports smooth, controlled cuts along bone and skin. The 11-inch overall length offers excellent maneuverability and control, making it ideal for detailed filleting work and fishing preparation.

This knife integrates naturally with essential kitchen tools such as the custom handmade fillet knife and complements versatile blades like the Damascus chef knife with USA flag handle, and the hand forged Damascus cleaver knife for complete fish and meat preparation capability.

    The Blade

The blade is hand finished to a satin edge. Run your thumb lightly across the bevel and you feel the tooth that bites through fish skin on the first stroke. The curved profile keeps the tip tracking along the lateral line without forcing your wrist into an awkward angle. A hand-finished edge holds its sharpness through repeated passes because no two strokes from the same craftsman are identical to a machine grind. Blade steel type and hardness are not published for this model. Omit any row you cannot source from the manufacturer directly.

    The Handle

Rosewood. Dark grain, tight pores, and a density that soaks up vibration without going slick. In a bare hand, it feels warm. In a wet glove it stays put. The handle contours sit just behind the brass bolster, so your index finger finds a natural stop before the edge. The two brass pins visible through the scales are structural, not decorative. They lock the tang to the wood and will not corrode in water.

    The Build

Full tang. The steel runs the entire length of the handle from tip to the end pin. For a knife that spends time dockside or at a wet cleaning table, this matters. There is no glue joint to soften or a blade insert to loosen after repeated exposure to saltwater and fish slime. The balance point sits just forward of the brass bolster, which keeps the curved tip in contact with the work without requiring you to push down hard.

    The Sheath

The hand-stitched leather sheath is cognac brown with tan saddle stitching and a snap closure that seats with a clean click. It fits the blade without rattle. Carry it on a belt loop or drop it in a tackle box. The leather molds to the blade geometry over time and gets tighter and more protective with regular use.

    Real-World Use

This blade is built for freshwater and saltwater fish: salmon, trout, bass, and snapper. The curve is tight enough to work a 12-inch bass and long enough to run the full length of a salmon fillet in two clean passes. A home cook breaking down whole fish at the counter will get the same controlled results as an angler on the dock. The hand-finished edge does what a machine grind cannot: it finishes at the angle the steel asks for, not the angle a belt grinder is programmed to hold.

    Who Is This For

    • The weekend angler who cleans his own catch and wants a blade that works as well as it looks hanging on the dock wall between trips.

    • The home cook breaking down whole salmon or snapper who needs a curved blade long enough to follow the spine in one pass.

    • The outdoor collector who carries working knives and wants hand-forged quality over anything stamped out of a factory.

    • The gift buyer looking for a handmade knife with a leather sheath that ships presentation-ready for Father's Day, Christmas, or a groomsman who actually uses his blades.

    How to Use It

Grip the rosewood handle with your index finger resting against the brass bolster. Set the curved tip at the tail end of the fish and angle down 15 to 20 degrees against the skin. Use long, smooth strokes along the backbone, not short sawing motions. Let the curve do the work. Rinse the blade after each fish and dry it before sheathing.

    FAQs

Is this a handmade fillet knife?

Yes. Each knife is individually shaped, ground, and hand finished at JW SteelCrafts. No two are identical. The hand work shows in the satin bevel and the way the handle fits the blade.

What fish can I use this knife on?

It handles freshwater and saltwater fish. The 11-inch overall length and curved blade profile are sized for salmon, trout, bass, and snapper. It works on any fish where you need to separate meat cleanly from skin and bone.

Does it come with a sheath?

Yes. Every knife ships with a hand-stitched leather sheath. The sheath is cognac brown with tan saddle stitching and a snap closure. It fits the blade snugly and includes a belt loop slot.

Why does full tang matter on a fillet knife?

Full tang means the steel runs the full length of the handle from tip to end pin. There is no separate insert that can loosen over time from repeated water exposure or flexing.

How do I sharpen this knife?

Use a fine whetstone or ceramic rod at the original bevel angle. Make even passes along the full length of the curved blade. Strop on leather afterward to realign the edge.

Is this knife legal in the United States?

Fixed blade knives are legal to own in all 50 states. Carry laws vary by state and local jurisdiction. Check your local regulations before carrying it in public.

    Can this knife be customized?

Contact JW SteelCrafts directly for custom orders. Standard production ships as shown with the rosewood handle, brass bolster, and leather sheath.

How long will this knife last?

With proper care, a full tang, hand-finished knife will outlast factory alternatives. Oil the blade every few weeks, store it in the sheath, and sharpen when the edge stops biting cleanly.
